Gulab Jamun Recipe

Ingredients:
For Gulab Jamun Dough:
- 1 cup milk powder
- ¼ cup all-purpose flour (maida)
- ¼ teaspoon baking soda
- 2 tablespoons ghee (clarified butter)
- ¼ cup milk (warm, as needed)
- 1 teaspoon lemon juice (optional, for softness)
- Oil or ghee for deep frying
For Sugar Syrup:
- 1½ cups sugar
- 1½ cups water
- 3-4 cardamom pods (crushed)
- ½ teaspoon rose water (optional)
- 1 teaspoon lemon juice (to prevent crystallization)
- Few saffron strands (optional)
Instructions:
Step 1: Prepare Sugar Syrup
- In a pan, add sugar and water, then heat on medium flame.
- Add cardamom pods, saffron, and lemon juice. Let it simmer for 5-7 minutes until slightly sticky.
- Turn off the heat and add rose water (if using). Set aside.
Step 2: Make Gulab Jamun Dough
- In a mixing bowl, combine milk powder, all-purpose flour, and baking soda.
- Add ghee and mix with fingers until the mixture becomes crumbly.
- Gradually add warm milk (little by little) and lemon juice, then knead gently into a soft, smooth dough.
- Cover and let it rest for 10 minutes.
Step 3: Shape and Fry
- Divide the dough into small equal portions and roll them into smooth balls without cracks.
- Heat oil or ghee in a pan on low-medium heat (not too hot).
- Gently drop the balls and fry while stirring continuously until golden brown.
- Remove and drain excess oil.
Step 4: Soak in Sugar Syrup
- Place the fried Gulab Jamun into the warm sugar syrup.
- Let them soak for at least 2 hours for best results.
Step 5: Serve
- Serve warm or chilled, garnished with chopped nuts like pistachios or almonds.
